C Programming: How do you delete the value of x in a struct array?

If you replace the first name field with any of you records with a \0 all you are doing is replacing the first name field of that record. To delete the record from an array, you would probably have to write the next record over all the fields, then write the record beyond that on the next record and so forth until the end. With dynamic variables there is something else you can do but you probably haven't gotten to them yet.
